Ingredients for Gujarati Bhaidku (forgotten recipe) Recipe

  • As required ½ cup of wheat
  • As required ½ cup jowar
  • As required ¼ cup bajri (pearl millet)
  • 0.33 cup Of rice
  • 0.33 cup moong
  • 0.67 tablespoons Of oil
  • 0.17 teaspoon Of mustard seeds
  • 0.17 teaspoon Cumin seeds
  • 0.33 nos Pinch asafoetida
  • 0.33 nos Onion
  • 0-0.33 nos cloves chopped garlic (green/dried)
  • 0.33 nos green chili
  • 0-0.33 nos Neem leaves
  • 0.33 piece ginger grated
  • 0.17 teaspoon Turmeric
  • 0.17 teaspoon chili powder
  • 0.17 teaspoon coriander powder
  • As required salt to taste
  • 0.33 nos glass of buttermilk
  • 0.67 nos glasses of water (as required)
  • 0.33 tsp Lemon juice (optional)
  • As required Coriander leaves

  • STEP 1.First wipe the grains with a cotton cloth. Then roast them separately in kadai .Roast slightly.The color of wheat, bajri and moong will change. take out in a plate.

  • STEP 2.Cool down the roasted grain mixture and grind it into a coarse flour.

  • STEP 3.In a mixing bowl, take 1 cup of bhaidku flour. Add 2 cup buttermilk and 2 cup water in it. Mix well and soak the mixture for 15-20 minutes.

  • STEP 4.Take oil in a cooker and add mustard seeds,cumin ,asafoetida and green spices. Saute the onion and add the prepared  Bhaidku flour mixture.

  • STEP 5.Then add the spices and water to it. Mix everything and put the cooker on medium flame.cook till 3 whistle Multigrain Bhaidku is ready. Add lemon juice and coriander from above and mix.
