Ingredients for Grilled Stuffed Bell Peppers Recipe
2 No.s Green Bell Pepper
1 cup Potato boiled mashed
3 tablespoon Sweet peas steamed
3 tablespoon Butter
2 Green chilli chopped Nos
1 inch Ginger grated
1/2 teaspoon Cumin powder
1/2 teaspoon Turmeric powder
As required Freshly chopped coriander as desired
As required Salt

STEP 1.First method is to insert the knife into the top of the capsicum and move in a circular motion to cut out the stem. Scoop out the seeds.

STEP 2.Second method is to cut the bell pepper in half vertically from the stalk. Scoop out the seeds.

STEP 3.Bell peppers are hollow and ready to stuff.

STEP 4.1 to make the filling, preheat a pan and add ½ tsp cumin seeds and allow to crackle, add 1 inch grated ginger, 2 finely chopped green chilli and ½ tsp turmeric powder. Turn off the heat and stir. The seasoning for the filling is ready.

STEP 5.2 in a large mixing bowl add 1 cup boiled and mashed potatoes, the prepared seasoning, 3 tbsp butter, 3 tbsp steamed peas, salt to taste, freshly chopped coriander leaves and stir to combine well. Check the salt and seasoning and adjust.

STEP 6.3 take a little oil in the hand along with some salt and rub the outside of the capsicum well with the salted oil mixture. This helps the capsicum to roast evenly.

STEP 7.4 fill the bell pepper with the filling.

STEP 8.5 preheat a grill pan on medium heat and grease it with oil.

STEP 9.6 place the bell pepper skin side down on the pan and grill till the skin becomes tender and begins to get slight black grill marks as it roasts. Optionally, cover the bell peppers with a lid to help them to cook faster. This cooking process will take about 15 to 20 minutes. Once the capsicum is cooked tender, remove it from the grill.
