Cooking Directions

  • STEP 1.Preheat the grill to medium-high heat.
  • STEP 2.Cut the avocados in half and remove the pits.
  • STEP 3.Brush the avocados with olive oil and sprinkle with salt and pepper.
  • STEP 4.Grill the avocados cut-side down for 2-3 minutes, until charred.
  • STEP 5.Remove the avocados from the grill and let them cool slightly.
  • STEP 6.Scoop out the flesh of the avocados into a bowl.
  • STEP 7.Add lime juice, cilantro, jalapenos, and salt to the bowl.
  • STEP 8.Mash the ingredients together until well combined.
  • STEP 9.Serve the grilled rockamole with tortilla chips or as a topping for burgers and sandwiches.
