  • 0.33 stick Celery , trimmed and finely chopped
  • 66.67 gram Risotto rice
  • 12.50 milliliter Vermouth or white wine
  • As required Sea salt
  • As required Freshly ground black pepper
  • 0.67 Large handfuls wild mushrooms , cleaned and sliced
  • sprig A few sprigs fresh chervil, tarragon or parsley , leaves picked and chopped
  • 0.17 Lemon , juice
  • 0.17 teaspoon Butter
  • 0.17 Small handful parmesan cheese , freshly grated, plus extra for serving
  • As required Extra virgin olive oil
  • 1/4 liter Organic chicken or vegetable stock , hot
  • 0.17 Handful dried porcini mushrooms
