  • 2 Apples, Diced
  • 4 cup Vegetable Broth
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg

Cooking Directions

  • STEP 1.Preheat the oven to 400°F (200°C).
  • STEP 2.Cut a butternut squash in half lengthwise and remove the seeds.
  • STEP 3.Place the squash halves on a baking sheet, cut side up.
  • STEP 4.Drizzle with olive oil and sprinkle with salt and pepper.
  • STEP 5.Roast in the oven for about 45 minutes, or until the squash is tender.
  • STEP 6.Remove the squash from the oven and let it cool slightly.
  • STEP 7.Scoop out the flesh of the squash and set aside.
