Ingredients for Gongura pulusu Recipe

  • 0.40 cup Gongura Leaves, Washed And Chopped
  • 0.40 tablespoon Oil
  • 1/5 teaspoon Mustard Seeds
  • 1/5 teaspoon Cumin Seeds
  • as required A Few Curry Leaves
  • 1/5 Onion, Finely Chopped
  • 1/5 teaspoon Ginger Garlic Paste
  • 1/10 teaspoon Turmeric Powder
  • 1/5 tablespoon Red Chili Powder
  • As required Salt To Taste
  • 1/5 Small Lemon Sized Tamarind, Soaked In Water
  • 1/5 tablespoon Jaggery, Grated

Directions: Gongura Pulusu Recipe

Cooking Directions

  • STEP 1.Wash and chop the gongura leaves. Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves.
  • STEP 2.Add chopped onions and saut茅 until they turn golden brown. Then, add ginger-garlic paste and cook for a minute.
  • STEP 3.Add chopped gongura leaves, turmeric powder, red chili powder, and salt. Mix well and cook for 5-7 minutes.
  • STEP 4.In a separate bowl, soak tamarind in water and extract the juice. Add the tamarind juice to the pan and cook for another 5 minutes.
  • STEP 5.Finally, add jaggery and mix well. Cook for a couple of minutes until the flavors blend together. Serve hot with rice or roti.

Cooking Tips

  • Adjust the spice level according to your preference by adding more or less red chili powder.
  • If gongura leaves are not available, you can use spinach as a substitute.
  • To enhance the flavor, you can add a pinch of fenugreek seeds while tempering the mustard and cumin seeds.

Storage and Serving

  • Gongura Pulusu can be stored in an airtight container in the refrigerator for up to 2 days.
  • Reheat the pulusu before serving. It tastes even better the next day as the flavors develop.
  • Serve Gongura Pulusu with steamed rice or roti for a complete meal.
