But this mamsam recipe has its distinctive flavour because of the gongura leaves, also known as sorrel leaves in English. First, add spices like turmeric powder, salt, ginger, green chilli paste, cumin, garlic paste, oil and coriander powder to make this mutton recipe. Then, in the pan, cook the mutton and after that, in a separate pan, heat oil and cook gongura leaves with spices like cloves, cumin seeds, cinnamon stick, cardamom, red chilis, pepper, green chilis, onions, garlic paste and ginger until they become smooth. Then finally, add the gongura leaves to the cooked mutton for five mins, mix well and serve hot.

Ingredients for Gongura Mamsam Recipe

  • 2 Sorrel leaves branches
  • 2 tablespoon Oil
  • 4 Cloves
  • 1 Bay leaves
  • 1 Cinnamon
  • 1 teaspoon Shahjeera
  • 1 cup Chopped Onion
  • 2 Green chilies
  • 1 teaspoon Ginger garlic paste
  • 500 gram Mutton
  • 1 Tomato
  • 1/2 teaspoon Turmeric powder
  • 1 teaspoon Chili powder
  • As required Salt
  • 1/2 teaspoon Coriander powder
  • 1/2 teaspoon Garam Masala
  • 2 glass Water
  • As required Coriander leaves

Cooking Directions

  • STEP 1.Heat the pan, add the sorrel leaves, add 2 cups of water and cover cook for 2 mins. Keep it aside

  • STEP 1.Heat the vessel and add oil. Add cloves, bay leaf, cinnamon and shahi jeera; let them pop.

  • STEP 1.Add onion and green chillies; fry well. Add ginger-garlic paste

  • STEP 1.Add the mutton and mix well. Add diced tomato

step 5

  • STEP 1.Add turmeric powder and red chilli powder, cook well for 3 min. Add salt to taste.

  • STEP 1.Add garam masala and coriander powder, cook for 5 mins. Add 2 glasses of water and cover cook for 20 mins on low flame.

step 7

  • STEP 1.Add sorrel mixture prepared before with coriander powder and cover for 3 mins. Serve with rice or roti.
