Goli Baje (Mangalore Bajji) Recipe

Goli baje or Mangalore Bhajji is one of the many street foods that the city is famous for. It is made of maida, yogurt and other ingredients. The batter should be of right consistency and the golden beauties will be perfect! This is served with coconut chutney. This is my way of recreating street style Goli Baje!

Ingredients for Goli Baje (Mangalore Bajji) Recipe

  • 0.33 Cup Maida
  • 0.33 Tbsp Gram flour (optional)
  • 0.17 Cup sour yogurt
  • 0.33 Tsp Chopped curry leaves
  • 0.33 Tsp Chopped green chillies
  • 0.33 Tsp Chopped ginger (optional)
  • 0.33 Tbsp Chopped fresh coconut pieces
  • 0.33 Tsp Sugar
  • To Taste Salt
  • 0.08 Tsp Baking soda

Directions: Goli Baje (mangalore Bajji) Recipe

  • STEP 1.In a mixing bowl take maida, besan, chopped ginger, chopped curry leaves, chopped green chilies and finely chopped fresh coconut.
Add yogurt, sugar and salt as required.
  • STEP 2.Mix everything well. 
Then add water little by little in parts.(add it in tbsps)
The batter should be thick. It should not be of pouring consistency but of dropping consistency. (You should be able to pinch a small quantity of batter and drop it it easily into oil.)
Let the batter rest for 3 hours. 
  • STEP 3.Then add baking soda and mix well.
  • STEP 4.Heat oil for deep frying.
  • STEP 5.Take a small amount of batter and drop it into oil.
  • STEP 6.The small balls puff out in size. (Shapes won’t matter.)
  • STEP 7.Fry them on a medium flame till golden brown on all sides.
  • STEP 8.Serve hot with coconut chutney.
