STEP 1.Wash the meat with lemon and water, set aside
STEP 2.In a pan add oil to heat then sugar to brown
STEP 3.Add the meat and brown everywhere
STEP 4.Add all of the seasoning ingredients and spices to the pan.
STEP 5.Top with one Litre of water, wake a boil and simmer for approx two hours.
STEP 6.The goat water is toasted once the meat slips off the bone simply, once this dissolves the starch into 50ml of water then raises the pan.
STEP 7.This may thicken the sauce a touch.
STEP 8.Finally add the rum then serve with some contemporary bread.
