  • STEP 1.In a pan, heat oil and add mustard seeds, urad dal, and curry leaves. Saute until the mustard seeds splutter.
  • STEP 2.Add finely chopped ginger and saute until it turns golden brown and releases its aroma.
  • STEP 3.Add tamarind juice, turmeric powder, red chili powder, jaggery, and salt. Mix well and cook until the mixture thickens.
  • STEP 4.Allow the thokku to cool completely before transferring it to a clean, dry jar for storage.
  • STEP 5.Serve the Ginger Thokku with Tamarind Juice as a side dish with rice, dosa, idli, or use it as a spread on bread.
