Cooking Directions

  • STEP 1.Marinate the mutton pieces with ginger paste, yogurt, red chili powder, turmeric powder, and salt.
  • STEP 2.Heat oil in a pan and add whole spices like cinnamon, cloves, and cardamom.
  • STEP 3.Add chopped onions and sauté until golden brown. Then, add ginger-garlic paste and cook until the raw smell disappears.
  • STEP 4.Add marinated mutton and cook until it turns brown and the oil separates from the masala.
  • STEP 5.Add tomato puree, coriander powder, cumin powder, garam masala, and cook for a few minutes.
  • STEP 6.Transfer the mixture to a pressure cooker, add water, and pressure cook until the mutton is tender.
  • STEP 7.Once the mutton is cooked, heat a piece of charcoal until red hot and place it in a small bowl in the center of the mutton.
  • STEP 8.Drizzle some ghee over the charcoal and cover the pressure cooker with a lid. Let it sit for 5-10 minutes to infuse the smoky flavor.
  • STEP 9.Remove the charcoal and bowl, and garnish the dish with fresh coriander leaves.
