Rajasthani jeeman is incomplete without gatte ki kadhi. There are various versions to this dish. Usually a fiery dish with the red chilli oil floating on top. Nevertheless, you can tone down the chilli and oil to suit your palate. The trick to this dish is how well the gatte (cylidrical rolls) are made and so also the yoghurt based gravy or kadhi.

Ingredients for Gatte Ki Kadhi Recipe

  • As required For gatte
  • 12.50 gram besan
  • 1/4 tablespoon Yoghurt
  • 0.13 teaspoon coriander powder
  • 0.03 teaspoon Turmeric
  • 0.13 teaspoon Red Chilli Powder
  • As required Salt
  • 0.13 teaspoon Fennel seeds crushed
  • 0.06 teaspoon Garam masala powder
  • 0.06 cup onion finely chopped
  • 1.75-2 mint leaves finely chopped
  • 1/4 tablespoon Oil
  • 1/2 cup Water for boiling and a little more for besan dough
  • As required For Kadhi
  • 50 gram yoghurt beaten and mixed with 1/2 cup of water
  • 1/2 Green chillies slit lengthwise
  • 0.13 tablespoon besan
  • 1.75-2 Curry leaves
  • 0.13 teaspoon Mustard seeds
  • 0.13 teaspoon cumin seeds
  • 0.06 teaspoon Fenugreek seeds
  • 0.06 teaspoon Asafoetida
  • 0.13 teaspoon turmeric powder
  • 1/4 teaspoon Red chilli powder
  • 1/4 teaspoon coriander powder
  • 0.06 teaspoon Garam masala powder
  • 1/2 Cloves
  • 1/4 Bayleaf
  • 1/4 Cinnamon
  • 1/4 Big cardamom
  • 1/4 teaspoon Kasuri methi crushed
  • 3/4 tablespoon Oil
  • As required coriander leaves for garnish
