Ingredients for GARLIC HERB GARDEN FOCCACIA Recipe

  • 0.13 cup extra virgin olive oil
  • 1.25 Pieces Garlic cloves smashed and roughly chopped
  • 1/4 tbsp 1 tbsp chopped fresh thyme or 1 tsp
  • 1/4 tbsp 1 tbsp chopped fresh rosemary or 1 tsp
  • 0.06 tsp fresh ground black pepper
  • 1/4 cup Warm Water
  • 0.56 tsp active dry yeast (1 packet
  • 1/4 tsp Sugar
  • 1/2 cups All-purpose flour
  • 0.13 cup fine sooji or sooji flour
  • 0.13 tsp fine sea salt or regular salt

  • STEP 1.MAKING THE DOUGH:
  • STEP 2.-In a pan, combine olive oil, minced garlic, herbs and the black pepper. Place the pan over low heat & cook, stirring occasionally, 5 to 10 minutes or until aromatic, but before the garlic browns. Set aside.
  • STEP 3.-In a large bowl, combine the warm water, yeast, and honey/ sugar. Stir a few times then let sit for 5 minutes.
  • STEP 4.-Add 1 cup of the flour & 1/2 cup sooji along with 1/4 cup of the infused garlic-olive oil mixture to the bowl with yeast and honey. Stir 3 to 4 times until the flour has moistened. Let sit for another 5 minutes
  • STEP 5..
Stir in remaining 1 cup flour & salt. When the dough comes together, transfer to a floured board and knead 10 to 15 times until smooth.
  • STEP 6.Transfer the dough to a large oiled bowl, cover with a warm, damp towel and let rise for 1 hour or till double in size( more important).
  • STEP 7.BAKING THE  BREAD:
  • STEP 8.-After 1 hour, heat oven to 200 degrees C.
  • STEP 9.Use two tbsp of the remaining garlic-olive oil mixture to oil a 9-inch by 13-inch rimmed baking sheet.
  • STEP 10.-Transfer dough to the sheet then press it down into the pan. Use your fingers to dimple the dough then drizzle the top with the remaining 2 tablespoons of the garlic-olive oil mixture.
  • STEP 11.-Let the dough rise for 20 minutes until it puffs slightly.
  • STEP 12.-Decorate as per your liking. Bake until golden brown, 20-25 minutes.
  • STEP 13.-Cool baked focaccia bread on a wire rack and serve with soup, salad or pasta!
