STEP 1.Cut 350 gms garlic chive shoots into 2 inch long pieces.Keep aside.
STEP 2.In a bowl add 200 gm frozen clam meat. Rinse with room temperature water. Strain off and discard the water. Keep the clam meat aside.
STEP 3.Heat the wok and add 2 to 3 tbsp oil and swirl to cover the surface of the hot wok. Add 3 cloves garlic finely minced, 1 ½ tsp minced ginger, 3 to 4 (or as per taste) Thai bird's eye chillies finely minced. Stir for a few seconds.
STEP 4.Add the clam meat and cook for 1 to 2 minutes till done.
STEP 5.Push them to the side and add the chopped garlic chive shoots into the oil.
STEP 6.Tilt the wok so that the heat is concentrated on the chive shoots and not on the clam. Stir fry for a few minutes till the chive shoots wilt and then mix together with the clam.
STEP 7.Add 1 ½ tbsp fish sauce and 1 ½ tbsp oyster sauce and toss the ingredient in the wok together well till flavours are well combined. Check for seasoning before serving
