The gargoyle & spire is a refreshing, barely-bitter highball featuring strega, an italian liqueur made with saffron. If you dont have strega, suze or bonal or another yellow herbal liqueur would do. Yellow chartreuse would work, too, but you may need to adjust the measure of syrup to compensate for the sweeter flavor profile.
