STEP 1.Wash the chicken properly,marinate it withsalt, turmeric powder, 2 tbsp garlic- ginger paste,1/2 tbsp kaffir lime juice & 1/2 tsp kaffir lime zest.
STEP 2.Heat mustard oil & ghee on a wok.When the ghee is fragnant temper it with cinnamon ,cardamom ,cloves ,bay leaves.
STEP 3.Add sliced onions & fry it till golden.Then add 1 chopped tomato, red chilli powder , 1 tspcurd, sprinkle little luck warm water & stir well.
STEP 4.Add garlic, ginger paste ,salt, turmeric powder, sugar & cook till the oil separates.
STEP 5.Add the marinated chicken, fried potatoes, cover with a lid & cook till the chicken is completely done.
STEP 6.Then open the lid ,add 1/2 tbsp gondoraj lebu /kaffir lime juice ,1/2 tsp lemon zest & mix well. Switch off the flame.
Put the gondhoraj / kaffir lime leaves over the chicken dish & cover it for 10 mints, so that the flavour of gondhoraj gets into the chicken.
Serve the gondhoraj chicken preferably with hot steam basmati rice ,drizzling some kaffir lime juice on top of the chicken before serving.
