Ingredients for Gallo pinto Recipe

  • 1/2 tablespoon olive oil
  • 1/4 tablespoon Butter
  • 1/4 red / yellow or green bell pepper, chopped
  • 1/4 medium sized onion, finely chopped
  • 1/4 tomato. Deseeded and remove the pulp. Finely chopped
  • 1/2-3/4 cloves garlic, finely chopped
  • 1/4 can black beans or 2 cups cooked black beans.pls retain the water
  • As required Vegatable stock
  • 1/2-3/4 cup cooked rice, preferably leftover rice
  • 1/2 tablespoon chopped fresh parsley and corriander
  • 1/4 teaspoon Salt
