Directions: Galbi Jjim Aka Korean Braised Short Ribs Recipe

Cooking Directions

  • STEP 1.In a large bowl, combine soy sauce, sugar, sesame oil, garlic, ginger, and black pepper. Add the short ribs and marinate for at least 2 hours or overnight.
  • STEP 2.Heat a large pot or Dutch oven over medium-high heat. Add the marinated short ribs and sear them on all sides until browned.
  • STEP 3.Pour in the beef broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 2 hours or until the meat is tender.
  • STEP 4.Remove the short ribs from the pot and set aside. Skim off any excess fat from the sauce and bring it to a boil to reduce and thicken.
  • STEP 5.Return the short ribs to the pot and simmer for an additional 10 minutes to allow the flavors to meld together.
  • STEP 6.Serve the Galbi Jjim hot with steamed rice and your choice of side dishes.

Cooking Tips

  • For the best flavor, marinate the short ribs overnight to allow the flavors to penetrate the meat.
  • If you don't have beef broth, you can use water or a combination of water and chicken broth.
  • To make the dish spicier, add some gochujang (Korean red pepper paste) or gochugaru (Korean red pepper flakes) to the marinade.
  • Garnish the Galbi Jjim with sliced green onions and toasted sesame seeds for added flavor and presentation.

Storage and Serving

  • Leftover Galbi Jjim can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat the dish in a pot over low heat, adding a splash of water or beef broth to prevent it from drying out.
  • Serve the reheated Galbi Jjim with fresh steamed rice and side dishes for a delicious meal.
