900 gram boneless ribs or loin or any combination of these, cut in medium size squares
1 teaspoon cumin
10 No.s garlic cloves 5 whole and 5 minced
1 No.s white onion chopped in large pieces
1 No.s shallot or Ecuadorian paiteña red onion chopped in large pieces
3 cup Water
1 cup Orange juice

STEP 1.season the pork with minced garlic, cumin, salt and pepper.

STEP 1. refrigerator it for a couple of hours.

STEP 1. add meat into a large pan along with chopped onions, shallot, garlic cloves and the 3 cups of water.

STEP 1. cook it on medium flame until the water is mostly absorbed.

STEP 1.add the orange juice to the pan and let it reduce.
step 6
STEP 1. the meat will begin to change its color and turn brown.

STEP 1. stir the mixture frequently to avoid burning,

STEP 1. cook it until all the pieces are evenly cooked.

STEP 1. add boiled yuca, mote and plantains to the pan.
