  • 1 inch Nos Chicken,cut into small 0.5 s
  • 6 piece Chicken feet cut into small Nos
  • 3 Celery stalks chopped small
  • 2 Carrots Sliced
  • 2 piece Medium size onions cut into small
  • 1 Garlic whole large pod, crushed
  • 5-6 Ginger, large slices Nos
  • 3-4 Scallion stalks tied into a knot
  • 2 Star anise Nos
  • 2 Cardamom Nos
  • 1 stick Cinnamon Nos
  • 2 Bay leaves Nos
  • 1 teaspoon Peppercorn
  • 1 pinch Salt
  • 12 cup Water

Directions: Flavourful Homemade Chicken Stock Recipe

step 1

  • STEP 1. cut 1 whole chicken and 6 chicken feet into as small pieces as possible. This releases as much of the flavour as possible into the stock. Add it to a large pot.

  • STEP 1. add 3 celery stalks chopped small, 2 carrots sliced, 2 medium size onions cut into small pieces.

  • STEP 1. add 1 whole large pod of garlic. Separate and crush each clove of garlic. No need to remove the skin.

  • STEP 1. add 5 to 6 large slices of ginger.

  • STEP 1. make a knot of 3 to 4 scallion stalks and add it to the pot.

  • STEP 1.next add 2 star anise, 2 cardamom, 1 stick cinnamon, 2 bay leaves, 1 tsp peppercorn and a pinch of salt.

  • STEP 1. then add cold water. It should cover all the ingredients.

  • STEP 1. cover the pot and turn the heat to high. As soon as the water starts boiling, turn off the heat.

  • STEP 1.using an oil strainer, skim off the scum.

  • STEP 1.then turn the heat to low, cover the pot and simmer for 2 to 3 hours.

  • STEP 1. keep an eye on the broth and skim the scum off, as and when required. This helps to make a clear broth.

  • STEP 1.after 3 hours turn off the heat.

  • STEP 1. using a slotted spoon remove all the meat and vegetables from the pot.

  • STEP 1. pour the brother through a fine sieve to catch the smaller impurities.

  • STEP 1. if stored in the refrigerator, the stock will solidify into a jelly texture. It can be stored in the fridge for 3 days.

  • STEP 1. to store the stock for onger, freeze it in an ice-cube tray. Then empty the frozen cubes in a sealable bag and store for a few months.
