Fat Top or Corn Pone is one of Guyana's many desserts rich in coconut. This is a delicious treat that is super easy to make, and a great vegan and gluten free option. A creamy layer of coconut milk on top of a thick layer of cornmeal cake. Think of corn pone as a Southern version of cornbread, but simpler. Corn pone consists of cornmeal, water, salt and oil or bacon drippings, while cornbread adds eggs, sugar, butter, milk, flour and baking powder into the mix.

Ingredients for Fat Top Recipe

  • As required For the cornmeal layer
  • 1 cup fine cornmeal
  • 0.58 cup Brown Sugar
  • 1/2 teaspoon Ground Ginger
  • 1/2 teaspoon ground cardamom or elychee
  • 1/2 teaspoon freshly ground nutmeg
  • 1 pinch Salt
  • 3 tablespoon freshly grated coconut
  • 1.50 cup coconut milk or evaporated milk
  • As required For the fat
  • 1 cup coconut milk

Directions: Fat Top Recipe

step 1

  • STEP 1.In a bowl mix cornmeal, shredded coconut, spices and sugar. Mix everything together. Pour in coconut milk and whisk properly.

step 2

  • STEP 1.Grease the bottom of a baking dish and pour the cornmeal mixture into it. Pop it into a pre heat oven at 300 degrees for 20 minutes.

step 3

  • STEP 1.In a bowl to prepare the fat add in the coconut milk and sugar and whisk it well so that the sugar gets dissolved completely.

step 4

  • STEP 1.Pour this coconut milk on top of the baked cornmeal and pop in the oven for 30-40 minutes.

step 5

  • STEP 1.Let it cool for about 10 minutes and cut it into square pieces of desired size.
