Farmer's market succotash is the absolute best way i've ever eaten veggies in my entire life. The recipe keeps it simple, so we really enjoy the seasonal, farm-to-table summer flavors.
2 Petite zucchini, roughly diced or use 2 3 small zucchini
1/2 Ears fresh corn kernels only
As required Splash heavy cream
1/4 bunch Fresh spinach stems removed
1 ounce Crumbled goat cheese
1/4 tablespoon Chopped basil
As required Toasted baguette for serving
