  • 1/4 cup Sugar

  • STEP 1.In a large pan, toast the glutinous rice flour over medium heat until lightly golden. Set aside.
  • STEP 2.In a separate pan, combine the coconut milk and sugar. Cook over low heat until the sugar is dissolved.
  • STEP 3.Add the toasted rice flour to the coconut milk mixture and stir well to combine.
  • STEP 4.Continue cooking over low heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
  • STEP 5.Remove from heat and let the mixture cool slightly.
  • STEP 6.Divide the mixture into small portions and shape each portion into a cylindrical log.
  • STEP 7.Roll each log in the toasted rice flour until fully coated.
  • STEP 8.Wrap each Espasol in banana leaves or parchment paper for serving and storage.
