  • As required INGREDIENTS FOR CHICKEN
  • 4 No.s chicken drumsticks, skin and bone
  • As required Salt
  • As required Pepper
  • 4 tablespoon cooking oil
  • As required INGREDIENTS FOR PICKLING SAUCE
  • 4 tablespoon olive oil
  • 1 teaspoon garlic paste
  • 1 teaspoon aji panca
  • 1 No.s red onion, sliced into feathers
  • 1 No.s carrot, julienned
  • 1 No.s celery stick, julienned
  • 1/4 teaspoon Salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon Oregano
  • 2 cup chicken stock
  • 4 teaspoon honey
  • 4 teaspoon red wine vinegar
  • 1 No.s bay leaf

Directions: Escabeche De Pollo Recipe

  • STEP 1.Preheat your oven at 375 degree f . heat some oil in a pan and cook the seasoned chicken for a few minutes until it becomes sear and brown. Take your chicken in a bowl and season it with salt and pepper.
  • STEP 2.Cook the chicken in the oven for 30-45 minutes . Heat oil in a pan and saute onions , garlic paste nd aji panca in it with some salt , pepper oregano and cumin. Add in some celery and carrots to the pan and saute for a few minutes.
  • STEP 3.Add vinegar , honey chicken stock and bay leaves to this and simmer for around 10-15 minutes.
  • STEP 4.Combine the cooked chicken with prepared sauce and let it cool.
