Cooking Directions

  • STEP 1.Preheat the oven to 375°F (190°C) and grease a baking dish.
  • STEP 2.In a large skillet, cook ground beef over medium heat until browned.
  • STEP 3.Add diced onion, minced garlic, chili powder, cumin, salt, and pepper to the skillet and cook for another 2-3 minutes.
  • STEP 4.Stir in black beans, corn, and enchilada sauce, and simmer for 5 minutes.
  • STEP 5.In a separate bowl, prepare the cornbread batter according to the package instructions.
  • STEP 6.Pour half of the cornbread batter into the greased baking dish.
