A luscious dish prepared from blend of grated cocoyam, then wrapped in leafy greens and slowly simmered with various types of fresh or smoked meat, fish, wrap along with meat,crayfish and contry onions. It is cooked simply with African spices and it's a finger-licking  dish that you cannot miss on.

Ingredients for Ekwang Recipe

  • 8 garlic large macabo cocoyams
  • 6 bunch cocoyam leaves
  • 2 pound stock fish/smoked fish/beef
  • 1.50 cup palm oil
  • 2 cup Crayfish
  • 1 Nos habanero pepper
  • 1 Nos medium size onion
  • 1 teaspoon country onions
  • 2 tablespoon garlic and ginger
  • 1/4 teaspoon white/black pepper
  • 3 Nos seasoning cubes/1 1/2 large crayfish seasoning cubes
  • 1 teaspoon Salt

Directions: Ekwang Recipe

step 1

  • STEP 1.Peef off cocoyams and blend it and transfer the blend cocoyams into a bowl.add 1/4 teaspoon salt and mix it well.

  • STEP 1.Tear off the cocoyam leaves from the centre into two parts

step 5

  • STEP 1. Apply some oil in the cooking pan & heat it.

step 6

  • STEP 1.In each half of the leaf add a tsp of cocoyam paste and wrap it into a roll

step 7

  • STEP 1.place all the cococyam rolls into the pan and then add 2 1/2 cups of boiling water.

step 8

  • STEP 1.Add 1 1/2 cup of palm oil Add chopped onions,ground county onions followed by ginger garlic paste.

step 10

  • STEP 1.Then add crayfish,some salt,seasoning cubes., Lastly,add all the meat, habanero pepper. cover and cook for 30 minutes and add oil if necessary

step 13

  • STEP 1.Season with white pepper if needed, Cook it for 2 minutes.
