Ingredients for Eggplant Recipe

  • 125 nos Eggplant - grm
  • 1 nos Onions - Large
  • 1 nos Tomato - large
  • As required Garlic
  • 1/2 tsp crushed -
  • As required Ginger
  • 1/2 tsp grated -
  • 1 tsp Coriander powder -
  • 1/2 tsp Garam masala -
  • 1/2 tbsp Coconut grated -
  • 1/4 tsp Ajwain -
  • 0.13 tsp Asafoetida -
  • As required Salt
  • As required chilli powder
  • As required turmeric - to taste
  • As required Coriander leaves
  • 1/2 tsp finely chopped -
  • 9 nos Mint leaves - to ( finely chopped)
  • 1/2 tbsp Curd / fresh cream( malai) -
  • 1/2 tbsp Oil -

Directions: Eggplant Recipe

  • STEP 1.Chop Onions and Eggplants long ( in strips).
  • STEP 2.Heat oil in a pan. Add asafoetida and ajwain. When it splutter add chopped Onions. Saute for 2 minutes, add ginger, garlic and all the other masalas.( coriander powder, turmeric and chili,)
  • STEP 3.Add grated coconut, saute for 2 minutes then add Brinjal. Stir and add salt. Saute for a minute, cook covered.
  • STEP 4.As Brinjal gets cooked add tomato and cover for a minute. Add curd/ fresh cream ( malai) and mint leaves.
  • STEP 5.Your Eggplant masala is ready. Serve with Roti/ Paratha / Bhakhri / Bajra roti and curd raita. This also goes well with daal rice or Khichadi.
