STEP 1. in a preheated pan add 1 tsp oil, 1 tsp mustard seeds and allow to crackle. Add ¼ tsp asafoetida, 6 cloves chopped garlic, 1 inch ginger finely chopped, 2 chopped green chilies, 2 onions finely chopped and 2 sprigs curry leaves. Saute till the onions become soft and lightly golden.

STEP 1.at this stage add 2 tomatoes finely chopped, ¼ tsp turmeric(haldi) powder, ½ tsp red chili powder, ½ tsp garam masala powder and salt to taste. Stir to mix well and saute till tomatoes soften.

STEP 1.next crack in 3 eggs and mix to scramble the eggs .saute till the eggs scramble becomes a little dry and most of the moisture has evaporated.

STEP 1.add 2 cups of leftover roti or chapatis or tawa paratha torn into small pieces. Stir well for 3 to 4 minutes for all the ingredients to combine well and for the roti pieces to get well coated with the egg masala. Check for salt and seasoning like red chili powder etc and adjust accordingly.
step 5
STEP 1.lastly squeeze in the juice of 1 lemon and add a small bunch of coriander leaves finely chopped. Mix together and serve hot.
