A healthy high protein breakfast of eggs cooked with vegetables, meat and shrimp sometimes served with a warm sauce. Egg Foo Young is a fluffy Chinese egg omelette filled with vegetables and pork or shrimp, smothered in a tasty Chinese Sauce.
STEP 1.1 in a large mixing bowl add ⅓ cup shredded chinese leeks, ⅓ cup shredded chinese chives, ⅓ cup shredded cabbage/ ½ cup shredded carrot, ¼ cup freshly chopped chillies.

STEP 2.2 heat a wok and add 1 to 2 tsp of oil and let it get hot. Add 4 ounces (113 gms) of ground pork meat and stir for 1 to 2 minutes till cooked. Add salt and pepper to taste. Add the cooked pork mince to the bowl of vegetables.

STEP 3.3 clean and cut 4 oz (113 gms) fresh shrimps and add to the other ingredients in the large mixing bowl.

STEP 4.4 in a mixing bowl crack 5 eggs and whisk. Add to the large bowl with the vegetables, pork and shrimp and mix together well.

STEP 5.5 add 2 tsp oyster sauce, 1 tbsp soy sauce, ¼ tsp salt and balck pepper to taste and mix well.

STEP 6.6 turn the heat to high and heat the wok for 10 seconds. Add 1 tbsp of oil and turn the heat to low as eggs burn easily.
step 7
STEP 7.7 add ½ cup of the egg mixture and fry on low heat for 1 to 2 minutes on each side or until both sides are golden brown. Remove from the wok and place on a serving plate.

STEP 8.8 in a small saucepan add 1 tbsp oyster sauce, 1 tbsp soy sauce, 1 tsp sugar, 1 tbsp cornflour, ½ tsp white pepper and 1 cup water or chicken broth. Mix together well. Place the saucepan on medium heat and cook for 1 to 2 minutes. When the sauce boils turn the heat to low. Stir continuously. Once the sauce thickens turn off the heat.

STEP 9.9 pour the sauce on the egg foo young.
