Ingredients for Egg Drop Soup Recipe

  • 2 Eggs whisked Nos
  • 1 teaspoon Ginger grated
  • 1 Garlic grated clove
  • 2 teaspoon Oil
  • 2.50 cup Chicken Stock
  • As required Cornstarch water
  • 1/2 teaspoon Salt
  • 1/4 teaspoon White Pepper
  • 1 Spring onion white part and green part chopped separately Nos

Directions: Egg Drop Soup Recipe

step 1

  • STEP 1. in a mixing bowl crack 2 eggs and whisk together well.

step 2

  • STEP 1. in a cooking pot or large saucepan add 2 tsp oil, 1 grated clove of garlic, 1 tsp grated ginger and stir till fragrant.

  • STEP 1. then add 1 small tomato diced. Stir and cook till the tomato is soft.

step 4

  • STEP 1. next add 2 ½ cups chicken stock and add the white part of 1 spring onion. Cover and bring it to a boil.

step 5

  • STEP 1. in a mixing bowl add 1 ½ tsp of cornstarch with 1 ½ tsp of water mix well together till there are no lumps.

  • STEP 1. slowly add this cornstarch water to the boiling chicken stock, stirring continuously to prevent lumps from forming.

step 7

  • STEP 1. after cooking and stirring for 1 minute, the stock will thicken.

step 8

  • STEP 1.at this stage, gradually pour in the whisked eggs into the thickened stock. Stir continuously while adding the eggs creates a silky egg drop soup. The egg should cook and form thin strands.

  • STEP 1. add ½ tsp salt and ¼ tsp white pepper and mix well.

step 10

  • STEP 1. serve in a bowl and top with chopped spring onion greens.
