A comforting and simple soup with a hint of sweetness and tanginess made from a base of chicken stock boiled with whisked eggs and flavoured with ginger garlic and tomatoes.

Directions: Egg Drop Soup Recipe
step 1
STEP 1. in a mixing bowl crack 2 eggs and whisk together well.
step 2
STEP 1. in a cooking pot or large saucepan add 2 tsp oil, 1 grated clove of garlic, 1 tsp grated ginger and stir till fragrant.
step 3
STEP 1. then add 1 small tomato diced. Stir and cook till the tomato is soft.

STEP 1. next add 2 ½ cups chicken stock and add the white part of 1 spring onion. Cover and bring it to a boil.
step 5
STEP 1. in a mixing bowl add 1 ½ tsp of cornstarch with 1 ½ tsp of water mix well together till there are no lumps.

STEP 1. slowly add this cornstarch water to the boiling chicken stock, stirring continuously to prevent lumps from forming.

STEP 1. after cooking and stirring for 1 minute, the stock will thicken.

STEP 1.at this stage, gradually pour in the whisked eggs into the thickened stock. Stir continuously while adding the eggs creates a silky egg drop soup. The egg should cook and form thin strands.

STEP 1. add ½ tsp salt and ¼ tsp white pepper and mix well.

STEP 1. serve in a bowl and top with chopped spring onion greens.
