STEP 1.Boil and mash the carrot, potato and green peas.
STEP 2.Sauté some chopped capsicum and green chilles in butter, and mix it with potato mash, along with salt,sugar,mixed herbs and chopped parsley
STEP 3.Slice up the boiled eggs and coat them with the mix (prepared earlier) followed by some bread crumbs, and give them a patty-like shape
STEP 4.Preheat the oven at 180⁰ for 10mins, arrange the patties in a baking tray and put it in the oven
STEP 5.Bake till both the surfaces of the patties develop a golden-brown crust
STEP 6.Serve hot with mayo or desired sauce!!
