Egg bhurji, also known as Anda Bhurji, is a scrambled eggs dish which is a popular Indian street food. Packed with the right amount of flavor and spice, these delicious Indian scrambled eggs are perfect for any meal of the day!
STEP 1.· Take a wok or kadai and set it on medium high heat, add oil and butter, add cumin seeds.
STEP 2.· Sauté for a minute, add onions and cook until onions are translucent.
STEP 3.· Now add the green chilies, ginger and chopped tomatoes, sauté for 3-4 minutes.
STEP 4.· Add salt, red chilli powder turmeric powder and pav bhaji masala, mix well and cook until tomatoes are lightly mushy.
STEP 5.· Now break the eggs in a bowl and whisk well with little salt and pour it in the wok.
STEP 6.· Cook while stirring continuously and keep the flame to medium heat, you can keep it dry or a little moist. The choice is completely yours.
STEP 7.· Garnish with freshly chopped coriander leaves and mix well.
STEP 8.· Serve hot with toasted bread slices, pav or paratha of your choice.
