Directions: Easy Brinjal Rice Recipe

Cooking Directions

  • STEP 1.Wash and soak the rice for 30 minutes. Drain and set aside.
  • STEP 2.Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Let them splutter.
  • STEP 3.Add chopped brinjal and sauté until it turns soft and cooked.
  • STEP 4.Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  • STEP 5.Add the soaked rice and sauté for a minute.
  • STEP 6.Add water and bring it to a boil. Reduce the heat, cover the pan, and let it cook for 15-20 minutes or until the rice is cooked and fluffy.
  • STEP 7.Once cooked, fluff the rice with a fork and garnish with fresh coriander leaves.
  • STEP 8.Serve hot with raita or yogurt.
