It is a very popular dessert prepared during autumn festival with durian pulp & pinpe. Mooncake is a Chinese pastry made and consumed during mid autumn festival which falls on August 15th on lunar calendar. A mooncake usually has a pastry-like crust and the inside of mooncake is filled with fillings such as red bean paste, lotus seed paste and even durian.

Ingredients for Durian Moon cake Recipe

  • 11 gram gelatin + 2 tbsp water
  • 300 gram fresh/frozen durian pulp
  • 125 gram snow skin flour
  • 30 gram gen
  • 130 gram water/carrot juice
  • 25 gram Shortening
  • 25 gram icing sugar
  • 1-2 Color drops
  • 1 tablespoon gao fen

  • STEP 1.Mix gelatin along with water and microwave for a minute.

  • STEP 2.Add it to durian pulp

step 3

  • STEP 3.Now take 25 gm of durian filling and make a ball.

  • STEP 4.Wrap it tightly with a food wrap and keep it in the refrigerator for 30 mins to 60 mins.

  • STEP 5.Mix the snow skin(pinpe) and gao fen together and keep it aside
  • STEP 6.Take a pot and add water/carrot juice and mix it with shortening and icing sugar. Bring it to a boil and add this water mixture to the flour mixture to make a dough.
  • STEP 7.Now add the coloring and knead for 1-2 mins. Make balls of the dough and wrap with durian filling.
  • STEP 8.Now dust with mooncake mold and with some gao fen. Gently press the mooncake into the mould to give it a shape.
  • STEP 9.Turn the mould upside down gently to release the mooncake. Store the mooncake in an airtight container and keep it for few hours or overnight and then serve.
