  • 1.80 kilogram firm ripe papaya or semi ripe
  • 1.40 kilogram Sugar
  • As required Water
  • As required Flavouring
  • 5 No.s Cloves
  • 1 teaspoon vanilla essence
  • 1 No.s stick cinnamon
  • 2 No.s Zest of limes
  • 2 No.s Zest of oranges

  • STEP 1.1 - peel and cut the papaya into big chunks.

  • STEP 2.2 - in a pan take the papaya chunks and enough water to immerse them completely.

  • STEP 3.3 - boil it for five minutes and strain the water.

  • STEP 4.4 - rinse the papaya pieces with cold water.

  • STEP 5.5 - put these pieces in a bowl, sprinkle baking soda on top and add some cold water.

  • STEP 6.6 - mix everything well.

  • STEP 7.7 - keep this aside for 4 hours.

  • STEP 8.8 - rinse the papaya with tap water.

  • STEP 9.9 - add sugar to the bowl and refrigerate it for 8 hours.

  • STEP 10.10 - transfer the papaya sugar mix to a pan.

  • STEP 11.11 - add enough water to the pan to cover the papaya mix by an inch.

  • STEP 12.12 - add half of the total sugar and mix well.

  • STEP 13.13 - cook it on high flame for 3 minutes.

  • STEP 14.14 - reduce the heat and cook for 3 hours.

  • STEP 15.15 - switch off the flame and let this mixture rest for 8 hours.

  • STEP 16.16 - after 8 hours place the pan on the stove and add remaining sugar and flavouring of your choice in it.

  • STEP 17.17 - move the pan a little or tilt it to sides.

step 19

  • STEP 18.18 - cook it for an hour on low heat.

step 20

  • STEP 19.19 - let the mixture cool and then transfer it into a glass jar.
