Diamond cuts are a traditional Kerala sweet snack that can be stowed for a few days. These diamond cuts are crunchy, crispy, and sugar syrup coated snacks. These are available in most Kerala bakeries and are also called maida biscuits in some places. Do you know why they're called diamond cuts? They got their title from the diamond figure they were carved into. There are multiple methods to create diamond cuts; some add eggs while others do not. However, the addition of eggs provides an incredible, almost bakery-like flavour and taste. "Egg haters" can prepare them without eggs too. Some people choose the traditional cardamon flavour, but egg haters can also use vanilla.

Ingredients for Diamond Cuts Recipe

  • 1/4 cup Maida
  • 0.13 cup Sugar
  • 1/2 tablespoon Oil
  • 1/2 pinch Salt
  • 1/2 pinch Turmeric powder

Cooking Directions

  • STEP 1.Take 1 cup maida in a bowl and add 2 tbsp oil. Add 2 pinches of salt and 2 pinches of turmeric powder. Mix well.
  • STEP 2.Gradually add 6 tbsp lukewarm water and mix well to prepare the dough.
  • STEP 3.Use your countertop and knead it with your hands to make a soft dough. Cover it and let it rest for 10 mins.
  • STEP 4.Take one portion of the dough to roll out. Grease your countertop or rolling board with some flour.
  • STEP 5.Roll out the dough with a rolling pin as thinly as possible. Then, cut it into a diamond shape with a knife or pizza cutter.
  • STEP 6.Do the same until the dough is finished. Next, heat oil in a pan to fry the diamond cuts in medium flame. Fry it until crispy, and then remove it from oil.
  • STEP 7.Transfer the diamond cuts to a large bowl. To make the sugar syrup, heat a pan and add ½ cup sugar, 3 tsp water. Heat it until the sugar melts.
  • STEP 8.Add the sugar syrup to the diamond cuts as required and mix well. Diamond cuts are ready to be served.

Pro tip

  • STEP 1.Ghee can be used instead of oil while making the dough.
