Cooking Directions

  • STEP 1.To make the dal, cook a mix of lentils with spices and water until soft and creamy.
  • STEP 2.For the bati, mix wheat flour, ghee, and spices to form a dough. Shape it into small balls and bake in a preheated oven until golden brown and crispy.
  • STEP 3.To prepare the bharta, roast the eggplant until the skin is charred. Remove the skin and mash the flesh. Mix it with spices, herbs, and lemon juice.
  • STEP 4.Serve the dal, bati, and bharta together. Drizzle ghee over the bati and serve with chutney on the side.

Cooking Tips

  • You can add a tadka (tempering) of ghee, cumin seeds, and red chili powder to enhance the flavor of the dal.
  • Make sure to prick the bati with a fork before baking to ensure even cooking and to prevent them from puffing up.
  • For a smoky flavor in the bharta, you can roast the eggplant directly on a gas flame or grill.
