Ingredients for dahi vada Recipe

  • As required for vada:
  • 0.17 cup Urad dal
  • 0.08 tablespoon crushed Ginger-Green Chilli
  • As required Optional
  • As required Oil
  • As required For deep frying
  • As required salt to taste
  • 0.67 cups lukewarm water
  • As required For assembling:
  • 1/2 cups ½Curd (yogurt)
  • 1/2 tablespoons powdered sugar or to taste
  • 0.17 tablespoon red chilli powder
  • 0.33 tablespoons roasted cumin powder
  • 0.17 tablespoon black pepper powder
  • 1/25 cup finely chopped coriander leaves
  • 1/25 cup Sweet Chutney (date tamarind chutney)
  • 1/25 cup green chutney made with coriander leaves
  • As required Garlic
  • As required green chilli

Directions: Dahi Vada Recipe

  • STEP 1.firstly, soak 1 cup urad dal for 5 hours.
  • STEP 2.drain off the water and transfer to the mixi or grinder. also, add 1 chilli and 1 inch ginger.
  • STEP 3.blend to smooth paste adding water as required. try to add a minimal amount of water to prevent the batter from turning watery.
  • STEP 4.transfer the urad dal batter to a large bowl.
  • STEP 5.take ¼ cup soaked moong dal into the blender.
  • STEP 6.blend to smooth paste and transfer to the same bowl of urad dal batter.
  • STEP 7.now add 1 tsp salt and mix well using the whisk.
  • STEP 8.prepare a thick batter. if the batter is runny then add a tbsp of rice flour.
  • STEP 9.now with wet spoon or using hand, drop a spoonful of batter into the hot oil.
  • STEP 10.keeping the flame on medium, stir occasionally.
  • STEP 11.fry until the vada turns golden brown and crisp.
  • STEP 12.drain off the vada over kitchen paper to remove excess oil.
  • STEP 13.now in a large bowl take 5 cup hot water.
  • STEP 14.add ½ tsp salt and ¼ tsp hing. mix well making sure it is well combined.
  • STEP 15.now drop the hot fried vada into the water and dip completely.
  • STEP 16.soak for 30 minutes, or until the vada absorbs water.
  • STEP 17.after 30 minutes, squeeze off the water and transfer to plate.
  • STEP 18.prepare sweetened curd for dahi vada
  • STEP 19.firstly, take 2 cup curd, 2 tbsp sugar and ½ tsp salt.
  • STEP 20.whisk and mix well making sure everything is well combined.
  • STEP 21.assemble dahi bhalla for serving:
  • STEP 22.firstly, pour the sweetened curd over the vada.
  • STEP 23.also pour a generous amount of green chutney and tamarind chutney.
  • STEP 24.sprinkle chilli powder, cumin powder, chaat masala.
  • STEP 25.and coriander.
  • STEP 26.finally, enjoy dahi vada or dahi bhalla chilled.
