Sabudana or sago is extremely low in fat but also low in protein. As it's just starch, other than the carbohydrates nutrition-wise, sabudana does not contain any minerals or vitamins and has very low amounts of calcium, iron, and fibre. However, it's naturally gluten-free, so it can serve as a wheat substitute in cooking and baking for people who are on a gluten-free diet. This ingredient is commonly used during fasting in most part of the country in form of khichdi, vada, tikki, kheer, thalipeet etc. But today in jai ki rasoi se made "dahi sabudana" which is completely oil free.
