  • STEP 1.In a blender, blend pandan leaves with water until smooth. Strain the mixture to obtain pandan juice.
  • STEP 2.In a mixing bowl, combine all-purpose flour, pandan juice, coconut milk, eggs, sugar, and salt. Whisk until well combined and smooth.
  • STEP 3.Heat a non-stick pan over medium heat. Pour a ladleful of the batter onto the pan and swirl it around to form a thin crepe. Cook until the edges start to lift and the bottom is lightly browned. Flip the crepe and cook for another 30 seconds. Repeat with the remaining batter.
