When we walked into our favorite little farmers market last week, we were thrilled to see an eye-catching rainbow of fresh, local veggies. Deep purple eggplants, sunny yellow squash, colorful peppersour mouths were immediately watering, and our minds were racing with ideas of delicious recipes to showcase their flavors. This fresh garden casserole does the job beautifully. Tender eggplant, mushrooms and italian cheeses lend a healthy amount of protein, so its a terrific solution for meatless monday, and the onions, peppers and fresh seasonings really enhance the flavor. The entire family loved it, and we love getting so many different fresh veggies into our hungry crew
