Ingredients for Crispy Potato And Pork Fritters Recipe
5 No.s Medium potatoes
100 gram Minced pork
1 No.s Spring onion
2 No.s Garlic
5 gram Ginger
1 tablespoon Oyster Sauce
1 teaspoon Light soy sauce
1 teaspoon Dark soy sauce
2 No.s Egs
150 gram Plain flour

step 1
STEP 1.1 place 100 gm minced pork in a mixing bowl, add 1 finely chopped spring onion, 2 finely chopped cloves garlic, 5 gm finely chopped ginger, 1 tbsp oyster sauce, 1 tsp light soy sauce, 1 tsp dark soy sauce, 1 egg, 1 tsp oil, salt to taste and mix well to combine all the ingredients. Keep aside.

STEP 2.2 cut the ends of 5 washed and peeled potatoes. Then cut into thick slices. Make a cut from the top to the centre of each slice to make a pocket. Keep aside.

STEP 3.3 in a mixing bowl add 150 gm plain flour, 1 egg, 120 ml water and mix to form a smooth batter.
step 4
STEP 4.4 spoon 1 tsp mince mixture into the pocket of each potato slice, to make a sandwich likeness.

STEP 5.5 heat 1 ltr oil in a wok.
step 6
STEP 6.6 dip the stuffed potato slices into the flour batter and then gently slide each one into the hot oil and deep fry for about 3 minutes until golden and rises to the surface. Do this in batches. Do not over crowd the wok.

STEP 7.7 remove and drain. Sprinkle with salt and serve hot.
