Maa, inji/mango ginger is a root vegetable and looks like ginger which is good for pickling.it’s a member of the ginger family that is not as widely known. That hit of raw mango along with the crunch of ginger is a delicious combination, a true marvel of nature. I have always seen my mother and mother in law use this injimanaga for fish curry which taste really delicious, i wanted to try this differently hence thought of making pickle which is very simple and quick.
