Naan bread or artisanal bread makes the best thin crust for a pizza. The wonderful thing about this ready-made bread is that it comes seasoned with herbs and spices already. From whole wheat to garlic and rosemary seasoning, this fluffy bread crisps nicely in the oven. Its a handy shortcut when dinner needs to be ready quickly. I love cooking with artichokes, but can be cumbersome when it comes to cooking them. Canned artichoke hearts are great as a topping for this type of pizza because you can easily use leftovers in salads and dips. To keep this recipe low in fat, i used tangy goat cheese. Its easy to spread and compliments the sweetness of the roasted tomatoes, nuttiness of the pine nuts and the spicy kick from the jalapeo. Serve this tasty pizza as an appetizer or as a healthy lunch. Youll never see flat bread the same way again when you start using it as crispy pizza crust.
