STEP 1.1 heat 2 tbsp peanut oil in a wok and add 2 finely chopped leeks, 5 gm finely chopped ginger, 2 cloves finely chopped and fry for a few seconds till softened.

STEP 2.2 add 150 gm raw minced beef and stir fry for 2 minutes.

STEP 3.3 add 1 grated carrot and stir fry for 5 minutes.

STEP 4.4 add 1 tsp ground red pepper, 2 tsp soy sauce, salt to taste and stir fry for 2 minutes and remove from the heat.

STEP 5.5 place in adish and allow to cool.

STEP 6.6 when cooled, place 1 tbsp mixture in the centre of each wrapper. Roll once from the closest corner and then fold in the two sides.

STEP 7.7 roll till the end using water to seal each joint.

STEP 8.8 heat oil in a wok. Once all the spring rolls are rolled, add them one at a time to the hot oil and deep fry for 2 to 4 minutes till golden.

STEP 9.9 then remove and drain off the excess oil.
step 10
STEP 10.10 transfer to a dish and serve.
