A healthy and delicious pancake made from courgette and flavoured with ginger and spring onions. Made from chickpea flour, shredded zucchini, and seasoned with onion, garlic, and garam masala, these fritter-like pancakes are light enough to enjoy a stack but filling enough to keep you satisfied until lunch. Serve with a drizzle of Sriracha or a dollop of vegan mayo for a more refreshing take.

Ingredients for Courgette Vegetarian Pancake Recipe

  • 400 gram Courgette grated
  • 1 No.s Egg
  • 200 gram Plain flour
  • 2 No.s Spring onionfinely chopped
  • 10 gram Ginger finely chopped
  • 1 tablespoon Black pepper powder
  • As required Salt
  • 300 milliliter Water
  • 2 tablespoon Oil

Directions: Courgette Vegetarian Pancake Recipe

step 1

  • STEP 1.1 place 400 gm grated courgette in a mixing bowl.

step 2

  • STEP 2.2 add 200 gm plain flour, 2 finely chopped spring onions, 10 gm finely chopped ginger, 1 tbsp pepper powder, salt to taste and crack 1 egg into the bowl.

step 3

  • STEP 3.3 to this add 300 ml water and mix the ingredients together to combine well.

step 4

  • STEP 4.4 in a frying pan heat 2 tbsp oil, and place 1 serving spoon of the courgette mixture in the pan.

step 5

  • STEP 5.5 fry on low heat for 3 minutes on each side. Flip the pancakes over and fry till they are cooked through and evenly browned on both sides.

step 6

  • STEP 6.6 remove from the pan and serve.
