Directions: Corn Relish Recipe

Cooking Directions

  • STEP 1.In a large pot, combine 4 cups of fresh corn kernels, 1 diced red bell pepper, 1 diced green bell pepper, 1 diced onion, 1 cup of vinegar, 1/2 cup of sugar, 1 teaspoon of mustard seeds, 1 teaspoon of celery seeds, and 1/2 teaspoon of salt.
  • STEP 2.Bring to a boil, then reduce heat and simmer for 10 minutes.
  • STEP 3.Remove from heat and let cool.
  • STEP 4.Transfer the relish to sterilized jars and refrigerate for at least 24 hours before serving.
  • STEP 5.Serve chilled as a condiment or side dish.
