Coriander Rice & Mango Raita Recipe

An easy to prepare and healthy to eat duo. This mango raita is adapted from the book ‘Indian cookery’. Change the raita recipe, but only in a few aspects. Have to use alphonso mangoes, but one could use any variety of sweet mangoes. It was so good, we need to make it often till the mango season is on in India. This is a sweet and tasty raita made with ripe sweet mangoes.

Ingredients for Coriander Rice & Mango Raita Recipe

  • 1 cup Rice
  • 2 cup Water
  • 1 Onion
  • 1 Coriander leaves handful
  • 1 inch Ginger
  • 1 Green chilli
  • 4 Garlic Cloves
  • 1 Himayat Mango
  • 1 cup Curd
  • pinch cardamom powder
  • 1 tablespoon Coconut
  • As required Palm sugar
  • 2-3 tablespoon Neem honey
  • 2 tablespoon Cooking Oil
  • 1/2 tablespoon Urad dal
  • 1/2 tablespoon Bengal gram
  • As required Salt as per required
  • As required Some roasted peanut

Directions: Coriander Rice & Mango Raita Recipe

step 1

  • STEP 1.Rinse and soak rice for 30 mins.

  • STEP 1.Chop onion and coriander leaves.

step 3

  • STEP 1.Slice ginger, chilli and garlic.

step 4

  • STEP 2.Grind and make a paste of green chilli,ginger and coriander leaves.

  • STEP 1.Cut mango into small pieces.

  • STEP 3.Add a pinch of cardamom powder into the curd and mix.

  • STEP 4.Now add sliced mango,1 tbsp coconut,palm sugar in the curd.

  • STEP 1.Top the curd with neem honey.

  • STEP 1.Add rice and water in the pressure cooker and cook at medium flame for one whistle.

  • STEP 1.Add oil in a cooking pot and heat it.

  • STEP 1.Then add urad dal and bengal gram.

step 13

  • STEP 1.Now add sliced garlic.

  • STEP 1.Add chopped onions, salt and green chilli.

  • STEP 1.Now add grinded paste and cook for 3 mins.

  • STEP 1.Now add boiled rice and mix well.

  • STEP 1.Now add roasted peanuts.
