Coconut patties or koftas are a favorite delicacy in Bengali/ Odia cuisine. Tender grated coconut koftas just shallow fried with zero oil is a healthy snack munch time in.monsoons with Puffed rice or Poha.
STEP 1.First take a fresh tender coconut. Break it into two halves. Now to separate the coconut from.the shell put it in freezer for 5 hrs. The coconut will separate from shell quickly. Now cut them into pieces. Grind the coconut coarsely.
STEP 2.Now add potatoes to the grated coconut. Add cumin powder, salt. Mash and mix thoroughly. Now take little oil in the palm and make the koftas giving your preffered shape.
STEP 3.Heat oil in a non stick tawa, shallow fry till golden brown and cooked. Serve hot with tea and pudina chutney
