650 gram Boneless lamb
3 No.s Red chilli
3 No.s Garlic Cloves
3 No.s Lemongrass
9 No.s Kaffir leaves
6 No.s Shallots
200 gram Cherry tomatoes
30 gram Coriander
2 tablespoon Tamarind paste
3 tablespoon Grated palm sugar
425 milliliter Coconut milk
3 tablespoon Peanut oil
1 tablespoon Sunflower oil
As required Salt
Directions: Coconut Lamb With Chili And Kaffir Recipe
step 1
STEP 1. in a wok heat 1 tsp sunflower oil, add 3 finely chopped cloves garlic, 3 finely chopped red chilies, 6 finely chopped shallots, 3 finely chopped lemongrass stems, 2 tsp tamarind paste, 9 kaffir lime leaves, 3 tsp grated palm sugar and stir fry for 2 minutes.
STEP 1.add 650 gm roughly diced boneless lamb and stir fry for 5 minutes.
STEP 2.then add 425 ml coconut milk, stir and bring to a boil. turn the heat to low, cover and cook for 20 minutes.
STEP 3.add 200 gm cherry tomatoes cut into halves, 30 gm roughly chopped coriander leaves, cover and simmer for a further 5 minutes. add salt, stir and turn off the heat. Transfer to a dish and serve with rice.
